J Gumbo’s Drunken Chicken Recipe: A Flavorful Journey

J. Gumbo's Drunken Chicken is a flavorful dish that combines tender chicken with a rich and savory sauce. While the exact recipe used by J. Gumbo's may be proprietary, here's a recipe inspired by the flavors of their Drunken Chicken dish:

Ingredients: – 4 boneless, skinless chicken breast – Salt and black pepper, to taste – 2 tablespoons olive oil – 1 onion, diced – 3 cloves garlic, minced – 1 red bell pepper, diced – 1 green bell pepper, diced – 1 cup sliced mushroom – 1 cup chicken broth – 1/2 cup dry white wine

– 1/4 cup bourbon whiskey – 1/4 cup soy sauce – 2 tablespoons Worcestershire sauce – 2 tablespoons brown sugar – 1 teaspoon dried thyme – 1 teaspoon dried rosemary – 1/2 teaspoon smoked paprika – 1/4 teaspoon cayenne pepper (optional, for heat) – 2 tablespoons cornstarch (optional, for thickening) – Chopped fresh parsley, for garnish

Season the Chicken: Season the chicken breasts with salt and black pepper on both sides.  Sear the Chicken: Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook until golden brown on both sides, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.

Sauté the Vegetables: In the same skillet, add the diced onion and garlic. Sauté until softened and fragrant, about 2-3 minutes. Add the diced bell peppers and sliced mushrooms, and cook until they begin to soften, about 3-4 minutes. 

Prepare the Sauce: Pour in the chicken broth, dry white wine, bourbon whiskey, soy sauce, Worcestershire sauce, brown sugar, dried thyme, dried rosemary, smoked paprika, and cayenne pepper (if using). Stir to combine and bring the mixture to a simmer. 

Simmer the Chicken: Return the seared chicken breasts to the skillet, nestling them into the sauce. Cover the skillet and let the chicken simmer in the sauce for 15-20 minutes, or until cooked through and tender. 

Thicken the Sauce (Optional): If desired, you can thicken the sauce by mixing 2 tablespoons of cornstarch with 2 tablespoons of cold water to create a slurry. Stir the slurry into the simmering sauce and cook for an additional 2-3 minutes, or until thickened. 

Serve: Once the chicken is cooked through and the sauce is thickened to your liking, remove the skillet from the heat. Garnish the drunken chicken with chopped fresh parsley before serving.
