Light and refreshing vegetarian snacks for hot summer nights: Watermelon Feta Skewers: Watermelon and feta cheese cubes. On toothpicks or small skewers, alternate watermelon and feta. Optional: For taste, drizzle balsamic glaze and add chopped mint. 

Skewers of Caprese: Put cherry tomatoes, mozzarella balls, and basil on tiny skewers. Dress with olive oil and balsamic vinegar. Sprinkle salt and pepper to taste. 

Veggie Sticks and Greek Yogurt Dip: Combine Greek yogurt, lemon juice, minced garlic, chopped fresh dill, and salt to taste. Serve with fresh carrots, cucumber, bell peppers, and celery sticks. 

Stuffed Mini Bell Peppers: Cut tiny bell peppers in half and remove seeds. Add cream cheese, chopped fresh herbs (parsley or chives), and lemon juice to each half. 

Tortilla Chip Mango Salsa: Dice mangoes, tomatoes, red onion, and jalapeño peppers. Stir in chopped cilantro, lime juice, and a touch of salt. 

Sea Salt Edamame: Steam or boil edamame till soft. Serve with coarse sea salt for a healthy snack. 

Avo Toast Bites: Toast small slices of baguette or whole grain bread and spread mashed avocado.
