Coconut has beneficial fats, especially medium-chain triglycerides (MCTs), which are digested differently than long-chain fatty acids in other foods. Coconut provides fast, lasting energy because the liver quickly absorbs and converts MCTs. 

Coconut is strong in saturated fats, yet evidence suggests that lauric acid may be neutral or even advantageous to heart health. Lauric acid boosts HDL cholesterol, improving heart health.
