Ingredients: 8 oz (225g) whole wheat or gluten-free pasta (penne or fusilli) Wash and cut 2 cups fresh spinach leaves 1 cup sliced mushrooms 2 minced garlic cloves 1 finely chopped tiny onion 2 cups veggie broth 

1 cup unsweetened almond milk (or other milk) 1/4 cup grated Parmesan (or vegan nutritional yeast) 1 Tbsp olive oil 1 tsp dried thyme Salt and pepper to taste Garnish: chopped fresh parsley 

Instructions: In a big pot, heat olive oil on medium. Sauté minced garlic and diced onion for 2-3 minutes until aromatic and transparent. Add sliced mushrooms to the pot and simmer for 4-5 minutes to soften. 

Add vegetable broth and almond milk and boil. Add spaghetti, dried thyme, salt, and pepper to the saucepan. Mix well. 

Turn the heat down to low, cover the pot, and let the pasta simmer for 10-12 minutes or until soft, tossing occasionally to avoid sticking. Add chopped spinach and grated Parmesan cheese (or nutritional yeast) to cooked pasta. Continue cooking for 2-3 minutes to wilt spinach and melt cheese.
